Baked Rosemary Salmon with Kimchi

I LOVE this recipe. It is very easy and requires almost no effort, yet it tastes super delicious. The baked rosemary salmon is very tender. This is my first time trying to bake kimchi with salmon, and the result is absolutely amazing. It gives an extra flavour but not too overpowering, as the baked kimchi tastes milder than its usual. You just need to try it.

Note: whole 30, paleo friendly.

OVERVIEW

INGREDIENTS

  • 2 Salmon fillets
  • 1 – 2 Tbs Olive oil
  • 1 – 2 Tbs Lemon juice
  • 3 – 4 Fresh Rosemary sprigs
  • Salt 
  • Pepper
  • ½ cup Kimchi 

INSTRUCTIONS
1. Preheat the oven to 200 ºc. (400ºf)

2. Place 2 pieces of tin foil onto a baking tray. Then, place salmon (1 fillet per 1 foil), and place rosemary sprigs on top of the salmon. 

3. Drizzle olive oil and lemon juice on top of the salmon. Then, add salt and pepper evenly.

4. Place kimchi next to salmon fillet in the same tin foil. Then, carefully seal tin foil over salmon & kimchi.

5. Bake for 20 minutes, or until the salmon is easily flaked with a fork.

6. Enjoy!
