Creamy Coconut Chia Pudding

This creamy coconut chia pudding is very easy to make and perfect for whenever you are feeling lazy or running late on those busy mornings.

Minutes: 10 minutes (then leave overnight)


INGREDIENTS

  • 250 ml of coconut milk
  • 1/4 cup of coconut water
  • 2-3 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 – 2 tsp of honey/maple syrup

INSTRUCTIONS

  1. Mix all the ingredients together and give it a good stir until combined.
  2. Leave it to thicken for about 15 minutes. Then stir again to make sure everything thickens evenly. Repeat the process once or twice.
  3. Cover with plastic wrap and store it in the fridge overnight (or at least 2 hours)
  4. Serve with fresh fruit, nuts, yogurt, and honey/maple syrup. Enjoy!
